Baking (sort of) - Number 8!

This week's bake isn't really a bake, it's a no-cook cheesecake.

This is a white chocolate berry cheesecake!

I have been making this dessert for years (11 years to be exact). Whenever I have a family get-together or need to take a pudding to friends' parties, this is my go-to dessert. 

It is super-easy to make and is a real crowd pleaser.

Baking - Number 7!

This week's bake is my favourite so far!

I have made ginger nuts!

They didn't need quite as long in the oven as the recipe suggested so they are a little browner than I would have liked, but they are super gingery and delicious!

I used coconut oil rather than butter and that seems to have worked well.

Baking - Number 6!

I'm still going with my baking, and I'd like to say I'm getting better - but looking at these cookies, I'm not sure I am! 

I've made an early Father's Day treat, today - Cinnamon Cookies.

As usual, mine don't look quite the same as in the recipe book, and they're a little crumbly, but they taste good and I enjoyed making them and that's what matters!

Baking - Number 5!

After a couple of weeks of something a little more healthy, I've made a not-so-good-for-you chocolate chilli cake.

This cake is full of chocolatey flavour with just a hint of spicy chilli - it's one of our favourites!

As usual, mine doesn't look quite the same as in the recipe book, but the taste is great!

If you don't like the hint of chilli, just leave it out.

Baking - Number 4!

I hope that the cookies went down well last week!

This week I've made a lemon and yoghurt cake. In fact my boys like it so much that I've made three of them!

Mine never look quite as light and fluffy as the pictures in the recipe, but they taste delicious!

Baking - Number 3!

I know some of you baked brownies last week - they all looked delicious!

This week I've made something just a little healthier - apple and cinnamon oat cookies!

They're made with maple syrup instead of sugar and the apple gives them sweetness, too They are lovely with a cup of tea!

Baking  - Number 1

I love to cook and do it all the time, however, I'm not known for my baking skills! Baking cakes and biscuits - or anything sweet at all for that matter - is not my strongest point. So, I have decided that I'm going to use this time to practise baking.

It is my Mum's birthday today (Sunday 3rd May) so I have started my baking journey by making her a batch of scones, which I will deliver to her doorstep, along with some clotted cream and a jar of jam.

Whilst I was making them, I realised how simple this recipe was and how it might be something you all might like to have a go at, too. I know lots of you have already sent pictures of your cooking and baking successes - these are in the Lego Stars Shine Gallery.
